Ingredients

  • 1.5 lbs boneless skinless chicken breasts or thighs
  • 1 cup uncooked long-grain brown rice
  • 2.5 cups low-sodium chicken broth
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 0.5 tsp salt (adjust to taste)
  • 0.25 tsp black pepper
  • 2 cups broccoli florets (fresh or frozen)
  • 0.5 cup shredded sharp cheddar cheese
  • 0.25 cup grated Parmesan cheese
  • 0.25 cup plain Greek yogurt or cream cheese

Instructions

  • In a slow cooker, add brown rice, broth, garlic powder, onion powder, salt, and pepper. Stir to combine.
  • Place chicken breasts on top of the rice mixture.
  • Cover and cook on HIGH for 2½ to 3½ hours, until chicken is cooked through and rice is tender.
  • Remove chicken, shred with forks, and return to the pot.
  • Stir in broccoli, Greek yogurt (or cream cheese), cheddar, and Parmesan. Cover and cook another 20–30 minutes until broccoli is tender and cheese is melted.
  • Let rest 5 minutes before serving to allow flavors to settle and sauce to thicken.

Notes

Add broccoli in the last 30 minutes for best texture. Let rest before serving to allow sauce to thicken. For extra creaminess, use a mix of cream cheese and Greek yogurt at the end. Leftovers reheat well!
