Ingredients
1.5lbsboneless skinless chicken breasts or thighs
1cupuncooked long-grain brown rice
2.5cupslow-sodium chicken broth
1tspgarlic powder
1tsponion powder
0.5tspsalt (adjust to taste)
0.25tspblack pepper
2cupsbroccoli florets (fresh or frozen)
0.5cupshredded sharp cheddar cheese
0.25cupgrated Parmesan cheese
0.25cupplain Greek yogurt or cream cheese
Instructions
In a slow cooker, add brown rice, broth, garlic powder, onion powder, salt, and pepper. Stir to combine.
Place chicken breasts on top of the rice mixture.
Cover and cook on HIGH for 2½ to 3½ hours, until chicken is cooked through and rice is tender.
Remove chicken, shred with forks, and return to the pot.
Stir in broccoli, Greek yogurt (or cream cheese), cheddar, and Parmesan. Cover and cook another 20–30 minutes until broccoli is tender and cheese is melted.
Let rest 5 minutes before serving to allow flavors to settle and sauce to thicken.

Add broccoli in the last 30 minutes for best texture. Let rest before serving to allow sauce to thicken. For extra creaminess, use a mix of cream cheese and Greek yogurt at the end. Leftovers reheat well!
