Ingredients

  • 3 overripe bananas (mashed)
  • 3/4 cup cottage cheese
  • 2 eggs
  • 1 tsp vanilla extract
  • 1 1/2 cups flour (all-purpose or whole wheat)
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • 1/4 tsp salt
  • optional chocolate chips, nuts, or seeds (up to 1 cup)

Instructions

  • Preheat the oven to 350°F (175°C). Grease or line a loaf pan with parchment paper.
  • In a blender or large bowl, combine bananas, cottage cheese, eggs, and vanilla. Blend until smooth.
  • In a separate bowl, whisk together flour, baking soda, cinnamon, and salt.
  • Fold the dry ingredients into the wet mixture until just combined. Don’t overmix.
  • Pour batter into the prepared loaf pan. Smooth the top with a spatula.
  • Bake for 45–55 minutes or until a toothpick comes out mostly clean. Tent with foil if browning too quickly.
  • Let cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

Notes

To make it gluten-free, use a GF flour blend with xanthan gum. For dairy-free, try a plant-based cottage cheese alternative. Add-ins like chocolate chips, nuts, or seeds should stay under 1 cup total. This bread freezes well when sliced and individually wrapped.
